Vegan Lavender Blueberry Muffins

Gotta love Traders Joes, am I right?

They have this amazing blueberry lavender almond milk that is so tasty. I figured why not use it in a muffin recipe and it did not disappoint. This recipe is a one-bowl recipe and has NO OIL!

What You’ll Need

1 cup Trader Joe’s lavender blueberry almond milk

dash of vanilla extract

lemon zest

1 cup AP flour

1 cup sugar

2 tsp baking powder

pinch of pink salt

1/3 cup apple sauce – unsweetened

2 cups fresh blueberries

(y’all know I live for a 10 ingredient or less recipe!)

What You’ll Do

Mix together blueberry lavender almond milk, vanilla and lemon zest – set aside.

Combine your flour, sugar, baking powder and salt.

Add your milk mixture and apple sauce to dry mix.

Gently fold in your blueberries.

Line cupcake tray and fill cups almost to the top.

Bake at 350 for 25-30 minutes.
