Quick &Easy Vegan Pasta Salad

I live for quick and easy recipes!

This recipe is great because it takes about 20 minutes from start to finish and such little effort! The salad itself only has 8 ingredients. I make my dressing at home BUT a bottle of Italian dressing would work in a pinch or if you wanted to keep it under 10 ingredients altogether! Pasta salad is another one of those super customizable dishes, feel free to add or leave out any ingredients you like.

What you’ll need

1 pack of cherry tomatoes – cut in fourths

1 cucumber – diced

1 orange pepper – diced

1 can of chickpeas – drained and rinsed

1 can of sliced olives – drained and rinsed

1 red onion – diced

Bunch of fresh parsley – chopped

1 box of pasta – cooked, any shape will work!

Bottle of Italian dressing – to taste

If you’d like to make your dressing you’ll need:

3 TBSP of olive oil, juice of one lemon, and a splash of apple cider (or white) vinegar. To taste add salt, pepper, red pepper flakes, garlic powder, and oregano.

What you’ll do

This is the best y’all, just throw it all in a bowl and mix, mix, mix!

Chill for 30 minutes and enjoy!
