Vegan Pumpkin Snickerdoodles

My most requested cookies of 2020!

Okay, so I’ve made A LOT of cookies this year, but these pumpkin snickerdoodles take the crown for my best. They pair best with a warm cup of coffee and only have 8 ingredients! You guys know by now I like to hope right into the recipe, so here we go.

What you’ll need

  • 3/4 cup white sugar
  • 1/2 cup of coconut oil
  • 3/4 cup of pumpkin puree
  • 2 tsp vanilla extract
  • 1/4 cup of maple syrup
  • 2.5 cups of AP flour (sifted)
  • 1 TBSP baking powder
  • 1 tsp salt

Make a small mixture of brown sugar and cinnamon. I like to do 1/4 cup of brown sugar and a tablespoon of cinnamon.

What you’ll do

Preheat oven to 375. Mix sugar, coconut oil, and pumpkin puree until combined, add vanilla extract and maple syrup. In a separate bowl sift together flour, baking powder, and salt and add to wet ingredients a half cup at a time. The dough will be thick and sticky, roll into one inch balls and roll in the brown sugar-cinnamon mixture until coated. Place on a cookie sheet and slightly flatten, make sure your cookies are about 2 inches apart. Bake for 12-14 mins and enjoy!
