I’m a sucker for a few things, but buffalo chicken and nachos are UP THERE! When I saw the Hades Nachos Disney was serving up for one of their fall treats I KNEW I had to remake it but vegan so I (and many others) could also enjoy this yummy, easy, and sharable snack!
Okay, I gotta admit the Disney version looks a little sad. I’m not sure what you’re supposed to do with that big tomato…
However, the ingredients seemed easy enough so I got to work!
For the chips, I used Beanfields Black bean with sea salt chips they added such a great flavor to these nachos!
For the Buffalo “chicken” I used Sweet Earth Mindful Chik’n and cooked that according to package directions, added some buffalo wing sauce, and cooked a little longer so the buffalo sauce really flavored the “chicken.”
This combo tastes JUST LIKE MOVIE THEATER CHEESE. I melted about half the bag of Whole Foods Plant-based Cheddar shreds and a couple of slices of Miyokos Mozz with about a 1/4 cup of oat milk over low heat, stirring frequently to avoid burning.
For your salsa, you can use whatever your preference is. I personally used Whole Foods 365 Brand medium salsa!
For your toppings, it is pretty basic, shredded lettuce, sliced jalapeños, and CHOPPED tomatoes!
Top with Vegan sour cream. Forager is my personal fave!
And that’s it!
