Veganized Disney Recipe from DCL!

Way back before COVID-19, I was a dedicated Disney thrifter, cookbooks were always my favorite find! I bought an older Disney cookbook, Delicious Disney by the Disney Chefs and Pam Brandon that came out in 2006.

I decided to veganize everything I could from the cookbook to better fit in with my lifestyle. The first recipe was for Onion-Mashed Potatoes, and if there’s anything I’m never turning down its potatoes and onions! It was a simple enough recipe took about 20ish minutes and I don’t think ill make mashed potatoes any other way again!

What I love about this recipe is how simple it is! Just 5 ingredients minus the spices! This is an adapted recipe from the Animators Palate which you can find aboard Disney Cruise Lines.

What you’ll need

  • 1 pound of red potatoes (I used russet because it’s all I had)
  • 1 tbsp. of olive oil
  • an onion
  • 1 tbsp. Earth Balance butter
  • 1/3 cup warmed mylk of choice (I used oat)
  • salt to taste
  • white pepper to taste

What you’ll do

Preheat your oven to 375

Roughly chop onions and toss with olive oil, bake for 15 minutes.

While your onions are cooking boil some salted water and add your chopped potatoes, cook until tender.

Take your baked onions and add them to a blender, pulse until they are like a puree, like the photo below.

Now the easiest part, add everything to a bowl and mash!

You can serve these with whatever you please, they’re the perfect side dish! I served mine up with some veggies I grilled up in my Ninja Foodi for a quick easy and delicious vegan meal!
